Ginger Cucumber Salad

2 large cucumbers, peeled and sliced thin

1/2 small red onion, sliced very thin

1/3 cup seasoned rice wine vinegar

1/3 cup packed brown sugar

1/3 cup apple juice

1 Tablespoon fresh grated ginger

 Mix the vinegar, sugar, apple juice and ginger in a bowl.

Add the cucumbers and red onion, mix well.

Place in the fridge for at least one hour before serving.
